A delicious vegetarian dish featuring jumbo pasta shells filled with a savory pumpkin and cheese mixture, topped with a flavorful marinara sauce.

Instructions
Preheat oven to 350°F (175°C). Cook shells until al dente, drain, rinse, and cool.
Mix pumpkin, cheeses, egg white, herbs, salt, and pepper for filling.
Prepare marinara by sautéing garlic in olive oil, then adding broth, tomatoes, pumpkin, herbs, salt, and cheese; simmer 15 minutes.
Fill shells with about 2 tbsp of filling using a spoon or pastry bag.
Spread 3/4 of sauce in a baking dish, arrange shells on top, cover with foil, and bake 30 minutes. Remove foil, add cheese, bake 10 more minutes.
Serve topped with remaining sauce and enjoy!
Notes
Use a piping bag for easier filling of the shells.
