A fresh and vibrant salad combining grilled chicken, sweet pineapple, creamy avocado, and crunchy almonds, perfect for a light yet satisfying meal.

Ingredients

Dressing

  • 50 ml mayonnaise
  • 85 ml plain Greek yogurt
  • 15 ml Dijon mustard
  • 1 piece lime (juice only)
  • 0.5 tsp chipotle hot sauce (adjust to taste)
  • a pinch salt and black pepper

Salad Components

  • 1 head romaine lettuce (washed and torn)
  • 5 cups baby spinach leaves
  • 2 ripe avocados (pitted, peeled, sliced lengthwise)
  • 3 small chicken breasts (grilled, cooled, sliced thin)
  • 1.5 cups pineapple slices (cut into strips)
  • 0.5 English cucumber diced
  • 0.33 red onion thinly sliced
  • 180 ml toasted almonds (roughly chopped)

Instructions 

  • Blend mayonnaise, Greek yogurt, pineapple chunks, Dijon mustard, lime juice, chipotle sauce, salt, and pepper until smooth with flecks of chili skin.
  • Chill the dressing in the fridge to let flavors meld and thicken slightly.
  • Arrange lettuce and spinach on plates, then layer avocado, chicken, and pineapple in a radial pattern.
  • Top with diced cucumber and sliced red onion for crunch and sharpness.
  • Drizzle with chilled dressing and sprinkle toasted almonds just before serving.
