Peanut Butter Noodle Bowls

A flavorful and quick Asian-inspired noodle bowl featuring peanut sauce, roasted broccoli, and ground chicken for a satisfying meal.

Ingredients

Pasta or Wheat Noodles

  • 8 oz Pasta or Wheat Noodles (I used tagliatelle)

Sauce ingredients

  • 0.25 cup Coconut Aminos (see notes for substitute*)
  • 32 g Powdered Peanut Butter
  • 2 tablespoons Peanut Butter
  • 1.5 tablespoons Olive Oil

Broccoli

  • 12 oz Broccoli Florets (cut into bite size pieces)
  • 1 pinch Salt and Pepper

Ground Chicken

  • 16 oz Ground Chicken Breast
  • 3 tablespoons Honey
  • 2 tablespoons Sriracha
  • 2 tablespoons Chinese Black Vinegar (or balsamic vinegar)
  • 2 frozen cubes Crushed Garlic Cubes (or 2 cloves fresh garlic)
  • 2 frozen cubes Crushed Ginger Cubes (or 1" piece garlic)

Instructions 

  • Mix powdered peanut butter, peanut butter, and coconut aminos in a large bowl. In a separate bowl, combine garlic, ginger, honey, vinegar, and sriracha. Set aside.
  • Cook pasta in boiling water until just shy of al dente. Reserve ½ cup pasta water. Toss noodles with peanut sauce, adding pasta water to reach desired consistency.
  • Roast broccoli in heated oil until evenly browned, about 6-8 minutes. Remove and set aside.
  • Cook ground chicken in the same pan until browned, then add sauce and cook until caramelized. Add broccoli to keep warm.
  • Combine noodles with chicken and broccoli, adding more pasta water if needed. Garnish with sliced green onion or chopped peanuts.

Notes

Use more pasta water to adjust sauce consistency. Garnish with green onions or chopped peanuts for extra flavor.
