Ingredients

Chicken Thighs

  • 8 pieces bone-in, skinless chicken thighs (8 thighs, approximately 1 lb 3 oz)
  • 2 Tbsp Paprika Spice Blend for Chicken (see recipe below)
  • 1 1/2 tsp kosher salt
  • 2 Tbsp mayonnaise or oil (virgin olive oil or vegetable oil)
  • 2 Tbsp chopped parsley (for garnish)
  • 4 Tbsp Smoked Paprika
  • 3 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 3 Tbsp Ground Black Pepper
  • 1 tsp Cayenne Pepper
  • 3 Tbsp Brown Sugar

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix paprika, salt, garlic powder, onion powder, black pepper, cayenne, and brown sugar to create the spice blend.
  • Rub the spice mixture onto the chicken thighs and coat evenly.
  • Place chicken on a baking sheet, drizzle with oil or mayonnaise, and bake for 35 minutes until cooked through.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, marinate the chicken with the spice blend for a few hours before baking.
