Instructions
Season chicken thighs with spices to coat evenly.
Heat olive oil in a large pot, sauté onions and garlic until soft.
Add chicken, brown on both sides, then stir in rice and pour in broth. Bring to a boil.
Reduce heat, cover, and simmer until rice is cooked. Add diced bell peppers in the last few minutes.
Notes
