A flavorful and easy one-pot dish combining tender chicken thighs, aromatic spices, and rice for a satisfying meal.

Ingredients

Protein

  • 1.5 lbs Chicken Thighs

Spices

  • 2 tsp Cumin
  • 2 tsp Paprika
  • 1 tsp Turmeric

Grains

  • 1.5 cups Long-grain Rice
  • 3 cups Chicken Broth

Vegetables

  • 1 Medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 diced Bell Pepper
  • 2 tbsp Olive Oil

Salt and Pepper

  • to taste Salt and Pepper

Instructions 

  • Season chicken thighs with spices to coat evenly.
  • Heat olive oil in a large pot, sauté onions and garlic until soft.
  • Add chicken, brown on both sides, then stir in rice and pour in broth. Bring to a boil.
  • Reduce heat, cover, and simmer until rice is cooked. Add diced bell peppers in the last few minutes.

Notes

For extra flavor, marinate the chicken with spices ahead of time.
