Instructions
Season chicken with salt, pepper, thyme, and rosemary.
Heat olive oil in a large pot and brown the chicken on both sides.
Add chopped onion and garlic; cook until fragrant.
Stir in rice, lemon juice, lemon zest, and broth; bring to a boil.
Reduce heat, cover, and simmer until rice is cooked and chicken is tender, about 20 minutes. Garnish with parsley before serving.
Notes
For a lighter dish, use boneless chicken breasts and low-sodium broth.
