A flavorful and easy one-pot meal combining tender chicken, fragrant herbs, and zesty lemon rice.

Ingredients

Protein

  • 4 pieces bone-in skin-on chicken thighs (or boneless chicken breasts)
  • 1 cup long-grain white rice (or brown rice)
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2.5 cups chicken broth (or vegetable broth for a lighter option)
  • 1 each lemon (juice and zest)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (chopped (or 1 teaspoon dried rosemary))
  • to taste Salt and pepper
  • for garnish Fresh parsley (chopped)

Instructions 

  • Season chicken with salt, pepper, thyme, and rosemary.
  • Heat olive oil in a large pot and brown the chicken on both sides.
  • Add chopped onion and garlic; cook until fragrant.
  • Stir in rice, lemon juice, lemon zest, and broth; bring to a boil.
  • Reduce heat, cover, and simmer until rice is cooked and chicken is tender, about 20 minutes. Garnish with parsley before serving.

Notes

For a lighter dish, use boneless chicken breasts and low-sodium broth.
