A flavorful and easy one-pot dish combining tender chicken, pasta, and a zesty lemon garlic sauce, perfect for a quick weeknight dinner.
Ingredients
For the Chicken and Marinade

heavy cream or half-and-half

Instructions
Combine chicken, 1 tbsp olive oil, garlic, oregano, salt, pepper, and lemon zest. Marinate for 15 minutes.
Sear the chicken in a large pot until golden and cooked through. Remove and set aside.
Sauté onion and garlic in butter until translucent. Deglaze with a splash of broth, then add remaining broth and cream. Simmer.
Add pasta, cook until al dente, then turn off heat. Stir in lemon juice, Parmesan, and spinach until wilted.
Reintroduce chicken, stir to combine, and serve garnished with parsley, Parmesan, and red pepper flakes if desired.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes to taste.
