One-Pot Honey BBQ Chicken Mac and Cheese

A delicious and easy one-pot meal combining tender honey BBQ chicken with creamy cheese pasta, perfect for a quick dinner.

Ingredients

Protein

  • 1 lb diced chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tbsp honey
  • ¼ cup sugar-free BBQ sauce or regular

Pasta

  • 2 cups elbow pasta or any pasta of your choice
  • 1 cup fat-free evaporated milk
  • 4 oz reduced-fat cream cheese
  • 1 tsp chicken stock powder
  • 1 ½ cups shredded light cheddar cheese

Instructions 

  • Coat chicken with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook in a pan for 4 minutes per side until golden and cooked through.
  • Drizzle honey and BBQ sauce over the chicken, stir to combine, then set aside.
  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • In the same pan, add evaporated milk and cream cheese, stirring until smooth. Add chicken stock powder and stir until combined and creamy.
  • Stir in shredded cheddar cheese until melted. Mix in cooked pasta, then add honey BBQ chicken and gently combine.

Notes

For extra flavor, garnish with fresh parsley or chives before serving.
