8ozfresh mushrooms(thinly sliced)

1.25cupslong grain white rice
3cupslow sodium chicken broth
3tbspsunsalted butter
1tbspextra virgin olive oil
0.5tspgarlic powder
0.5tspsweet paprika
0.25tsponion powder

Instructions
Preheat oven to 375°F (190°C).
Melt butter and olive oil in a large oven-safe skillet over medium-high heat. Sauté onions until translucent. Add seasoned chicken and cook 5 minutes, turning for even color.
Add mushrooms, salt, and pepper; cook 4 minutes. Stir in garlic and cook 1 minute. Mix in rice, toast for 1 minute, then pour in broth. Bring to a boil.
Cover and bake for 30 minutes. Uncover and bake 3 minutes. Rest for 5 minutes, then garnish with Parmesan and parsley.
