A flavorful and easy one-pot dish combining tender chicken, mushrooms, and rice, perfect for a comforting meal.

Ingredients

Protein

  • 12 oz chicken breasts (cut into cubes)
  • 8 oz fresh mushrooms (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 small yellow onion (finely diced)
  • 1.25 cups long grain white rice
  • 3 cups low sodium chicken broth
  • 3 tbsps unsalted butter
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp sweet paprika
  • 0.25 tsp onion powder
  • to taste salt
  • to taste freshly ground black pepper
  • for garnishing Grated Parmesan cheese
  • for garnishing Fresh parsley chopped

Instructions 

  • Preheat oven to 375°F (190°C).
  • Melt butter and olive oil in a large oven-safe skillet over medium-high heat. Sauté onions until translucent. Add seasoned chicken and cook 5 minutes, turning for even color.
  • Add mushrooms, salt, and pepper; cook 4 minutes. Stir in garlic and cook 1 minute. Mix in rice, toast for 1 minute, then pour in broth. Bring to a boil.
  • Cover and bake for 30 minutes. Uncover and bake 3 minutes. Rest for 5 minutes, then garnish with Parmesan and parsley.

Notes

Ensure rice is fully absorbed and flavors meld before serving.
