One Pot Chicken Dumpling Soup (with refrigerated biscuit dough!)

A comforting and hearty soup featuring tender chicken, flavorful vegetables, and fluffy dumplings all cooked in one pot for easy cleanup.

Ingredients

Dairy & Vegetables

  • 4 tablespoons butter
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 2 teaspoons dried sage leaves
  • 1 teaspoon fresh thyme leaves, optional
  • 3 tablespoons flour + more for tossing the biscuits
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 2 cups heavy cream
  • 1 cup frozen peas
  • 16.3 oz. refrigerated biscuit dough
  • to taste Kosher salt
  • to taste fresh cracked pepper
  • for garnish fresh chopped parsley

Instructions 

  • Melt butter, cook vegetables with salt and pepper for 8 minutes.
  • Cut biscuits into 6 pieces, toss in flour.
  • Add garlic, seasonings, then stir in flour and cook 1 minute.
  • Pour broth to deglaze, add remaining broth, chicken, cream, peas, and bay leaves. Simmer.
  • Add biscuit pieces on top, cover, and simmer 15 minutes until cooked through.
  • Season with salt and pepper, garnish with parsley, and serve.

Notes

Ensure dumplings are cooked through by testing with a toothpick.
