1limejuice of 1 lime

Instructions
Prepping all ingredients beforehand ensures smooth cooking. Chop and measure everything before starting.
Heat sesame oil in a large pot over medium heat. Cook sliced onion until soft, about 5 minutes.
Add garlic, ginger, turmeric, and red curry paste; cook for 1 minute until fragrant.
Add pumpkin, red pepper, and carrots; cook for 5 minutes to start softening.
Stir in pumpkin puree, broth, and coconut aminos; bring to a simmer. Add chicken and cover; cook 15-20 minutes until chicken is cooked and veggies tender.
Add coconut milk and broccoli; simmer for 5 minutes until broccoli is bright green and tender. Finish with lime juice and salt.
