1jarsun-dried tomatoes, chopped, oil drained and reserved
1poundchicken breast, cut into 1-inch cubes
1cupdiced yellow onion
1teaspoonsea or Himalayan pink salt

1cuporzo pasta (uncooked)
3cupschicken broth
2cupsfresh spinach
0.5cupgrated Parmesan cheese

Instructions
Heat 2 tablespoons of oil from sun-dried tomato jar in a large skillet over medium heat. Sauté chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
Add onion to the skillet and cook for 2-3 minutes. Stir in sun-dried tomatoes, salt, pepper, oregano, garlic powder, onion powder, and red pepper flakes. Toast orzo for 1 minute.
Return chicken to the skillet, add chicken broth, and simmer for 10-15 minutes until orzo is tender. Stir in spinach and Parmesan cheese, then remove from heat.
Serve warm, garnished with parsley and extra Parmesan if desired.
Notes
Use high-quality sun-dried tomatoes for best flavor. Adjust red pepper for spice preference.
