A flavorful and easy one-pan dish combining tender chicken, sun-dried tomatoes, and orzo pasta in a savory broth, perfect for a quick weeknight dinner.

Ingredients

  • 1 jar sun-dried tomatoes, chopped, oil drained and reserved
  • 1 pound chicken breast, cut into 1-inch cubes
  • 1 cup diced yellow onion
  • 1 teaspoon sea or Himalayan pink salt
  • 0.25 teaspoon Simply Organic® Black Pepper
  • 1.5 teaspoons Simply Organic® Oregano
  • 1 teaspoon Simply Organic® Garlic Powder
  • 1 teaspoon Simply Organic® Onion Powder
  • 0.5 teaspoon Simply Organic® Crushed Red Pepper
  • 1 cup orzo pasta (uncooked)
  • 3 cups chicken broth
  • 2 cups fresh spinach
  • 0.5 cup grated Parmesan cheese

Optional Garnish

  • to taste Fresh parsley for garnish

Instructions 

  • Heat 2 tablespoons of oil from sun-dried tomato jar in a large skillet over medium heat. Sauté chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
  • Add onion to the skillet and cook for 2-3 minutes. Stir in sun-dried tomatoes, salt, pepper, oregano, garlic powder, onion powder, and red pepper flakes. Toast orzo for 1 minute.
  • Return chicken to the skillet, add chicken broth, and simmer for 10-15 minutes until orzo is tender. Stir in spinach and Parmesan cheese, then remove from heat.
  • Serve warm, garnished with parsley and extra Parmesan if desired.

Notes

Use high-quality sun-dried tomatoes for best flavor. Adjust red pepper for spice preference.
