Ingredients

Protein

  • 1.25 lb boneless skinless chicken thighs

Herbs & Seasonings

  • 10-12 leaves fresh sage leaves
  • 1 large lemon (sliced)
  • Salt & cracked black pepper Salt & cracked black pepper (to taste)
  • 2 teaspoons garlic powder
  • 1 teaspoon poultry seasoning
  • 2 teaspoons smoked paprika

Oils & Fats

  • 1 tablespoon olive oil (extra virgin)
  • 2 tablespoons butter (unsalted)

Vegetables & Aromatics

  • ½ large shallot (chopped)
  • 3 garlic cloves garlic (minced)

Pasta & Broth

  • 1 cup orzo pasta
  • 2 cups reduced sodium chicken broth

Instructions 

  • Brine chicken in water with salt, lemon slices, and sage for 30-60 minutes.
  • Pat dry chicken, season with spices, and sear in olive oil until golden, then set aside.
  • Add butter, shallot, sage, and garlic to the skillet; cook briefly.
  • Toast orzo, add broth, and bring to a boil. Return chicken to pan and simmer until orzo is al dente, about 10-12 minutes.
  • Rest for 5 minutes, garnish with sage, and serve.

Notes

Use fresh sage for best flavor and adjust seasoning to taste.
