Instructions
Brine chicken in water with salt, lemon slices, and sage for 30-60 minutes.
Pat dry chicken, season with spices, and sear in olive oil until golden, then set aside.
Add butter, shallot, sage, and garlic to the skillet; cook briefly.
Toast orzo, add broth, and bring to a boil. Return chicken to pan and simmer until orzo is al dente, about 10-12 minutes.
Rest for 5 minutes, garnish with sage, and serve.
Notes
Use fresh sage for best flavor and adjust seasoning to taste.
