Instructions
Season chicken with smoked paprika, sweet paprika, thyme, salt, and pepper.
Heat olive oil in a skillet and sear chicken 5–7 minutes per side until golden. Remove and set aside.
Sauté onion and bell pepper 4–5 minutes, then add garlic and cook 30 seconds.
Pour in chicken broth, scrape up browned bits, then return chicken. Cover and simmer 15–20 minutes.
Stir in heavy cream (if using) and cook 2–3 minutes to thicken. Garnish with parsley and serve.
Notes
For a richer sauce, add more heavy cream or serve with rice or potatoes.
