A flavorful and easy-to-make chicken dish cooked in a single pan, featuring smoky paprika and fresh vegetables.

Ingredients

Meat

  • 6 pieces bone-in, skin-on chicken thighs (or 4 large boneless thighs/breasts)
  • 2 tablespoons olive oil
  • 1 small onion (sliced)
  • 1 red bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 2 teaspoons smoked paprika
  • 1 teaspoon sweet paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ¾ cup chicken broth
  • ¼ cup heavy cream (optional, for creamy sauce)

Instructions 

  • Season chicken with smoked paprika, sweet paprika, thyme, salt, and pepper.
  • Heat olive oil in a skillet and sear chicken 5–7 minutes per side until golden. Remove and set aside.
  • Sauté onion and bell pepper 4–5 minutes, then add garlic and cook 30 seconds.
  • Pour in chicken broth, scrape up browned bits, then return chicken. Cover and simmer 15–20 minutes.
  • Stir in heavy cream (if using) and cook 2–3 minutes to thicken. Garnish with parsley and serve.

Notes

For a richer sauce, add more heavy cream or serve with rice or potatoes.
