One-Pan Lemon Butter Chicken

A quick and flavorful one-pan dish featuring tender chicken in a creamy lemon butter sauce with spinach.

Ingredients

Protein

  • 4 pieces chicken thighs or breasts (bone-in or boneless)
  • 2 teaspoons smoked paprika
  • to taste Kosher salt
  • to taste Ground black pepper
  • 1 tablespoon unsalted butter
  • 3 cloves cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cups baby spinach, chopped
  • 1 whole lemon (juice and zest) (add zest if extra lemon flavor desired)
  • 1 tablespoon chopped fresh thyme or dried thyme

Instructions 

  • Preheat oven to 400°F (200°C). Season chicken with paprika, salt, and pepper.
  • Melt butter in an oven-safe skillet over medium-high heat. Sear chicken 2-3 minutes per side until golden. Remove and set aside.
  • Add garlic to the pan, cook 1 minute. Stir in chicken broth, heavy cream, and Parmesan. Simmer and add spinach until wilted, 3-5 minutes.
  • Stir in lemon juice, zest, thyme. Return chicken to skillet and transfer to oven. Bake 15-25 minutes until internal temp reaches 165°F (73°C).

Notes

Serve warm with your favorite sides. Adjust seasoning to taste.
