One Pan Garlic Parmesan Chicken Pasta

A quick and creamy chicken pasta dish cooked in one pan, perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts ((about 680g))
  • 8 oz penne or rotini pasta ((225g))
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth ((480ml))
  • 1 cup heavy cream ((240ml))
  • 1 cup freshly grated Parmesan cheese ((100g))
  • 2 tbsp olive oil ((30ml))
  • 2 cups fresh spinach ((about 60g, optional))

Instructions 

  • Heat olive oil in a skillet, cook chicken 6 mins per side, then rest.
  • Sauté garlic in the same skillet for 1 min.
  • Add pasta and broth, boil, cover, and simmer 10 mins until al dente.
  • Stir in cream and Parmesan until combined.
  • Slice chicken, add to skillet with spinach, toss gently.
  • Serve warm, garnished with extra Parmesan if desired.

Notes

For a lighter version, use half and half instead of heavy cream.
