A delicious one-pan meal combining tender chicken, flavorful rice, and a creamy Parmesan sauce for a satisfying dinner.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts

Grains

  • 1 cup long-grain white rice

Broth & Dairy

  • 2 cups chicken broth
  • 1 cup heavy cream

Cheese

  • 1 cup grated Parmesan cheese

Aromatics

  • 1 small onion finely chopped
  • 3 cloves garlic minced

Oils & Seasonings

  • 2 tablespoons olive oil
  • to taste Salt and pepper

Garnish

  • for garnish Fresh parsley chopped

Instructions 

  • Season chicken with salt and pepper. Brown in olive oil, then remove.
  • Sauté onion and garlic until fragrant, about 2-3 minutes.
  • Add rice and toast for 2-3 minutes, then pour in broth and cream. Simmer gently.
  • Return chicken to skillet, cover, and cook for 20-25 minutes until rice is tender and chicken is cooked through. Stir in Parmesan cheese and garnish with parsley.
