One Pan Chili Lime Chicken & Rice

A quick and flavorful one-pan dish combining tender chicken, rice, and zesty lime with bold spices.

Ingredients

Protein

  • 6 pieces boneless skinless chicken thighs (or breasts, pounded to even thickness)
  • 2 tablespoons vegetable oil
  • 3 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 piece lime (juice for cooking and wedges for serving)
  • 1 cup uncooked white rice
  • 2 ¼ cups chicken broth

Garnish

  • chopped cilantro (for garnish)

Instructions 

  • Mix chili powder, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Season chicken with half of this mixture.
  • Heat oil in a skillet, cook chicken 5-8 minutes per side until browned, then remove.
  • Add rice, remaining seasonings, broth, and lime juice to the skillet. Return chicken on top, cover, and simmer 20-25 minutes.
  • Fluff rice, garnish with cilantro, squeeze lime wedges, and serve.

Notes

Adjust spice levels to taste and serve with extra lime wedges for added flavor.
