A delicious and refreshing chicken salad combining sweet pineapple, crunchy almonds, and fresh herbs, perfect for a light lunch or dinner.

Ingredients

Protein

  • 2 cups chicken, cubed into 1-2 inch pieces (for better texture)
  • 1.5 cups pineapple, drained well (Dole canned tidbits)
  • 0.5 cup celery
  • 0.33 cup slivered toasted almonds (for extra crunch)
  • 2 tbsp cilantro
  • 2 tbsp red onions
  • 0.5 cup greek yogurt (prefer Fage Total for thicker consistency)
  • 1.5 tbsp lemon juice
  • 1.5 tsp dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Garnish & Serving

  • 12 leaves lettuce leaves
  • 4 croissants croissants

Instructions 

  • Mix chicken, pineapple, celery, almonds, cilantro, and red onions in a bowl.
  • In a separate small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper.
  • Combine the dressing with the chicken mixture and toss gently.
  • Serve on lettuce leaves with croissants on the side.
