Ingredients

Grains

  • 2 cups couscous

Protein

  • 1 lb chicken breast, diced

Vegetables

  • 1 piece onion, chopped
  • 2 cloves garlic, minced

Spices & Liquids

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric

  • 1 cup chicken broth

Garnish

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Sauté onion and garlic until translucent, then add diced chicken and cook until browned.
  • Add bell pepper, zucchini, cumin, paprika, turmeric, salt, and pepper; cook for a few minutes.
  • Pour in chicken broth, bring to a simmer, and cook for 10 minutes.
  • Prepare couscous according to package instructions, fluff with a fork.
  • Serve couscous in bowls topped with chicken and vegetable mixture, garnished with parsley.

Notes

Feel free to add a squeeze of lemon for extra flavor.
