Instructions
Chop onions, carrots, and celery; mince garlic; prepare chicken and herbs.
Heat olive oil in a large pot over medium heat. Sauté vegetables until softened, about 5 minutes.
Add garlic and cook for 1 minute. Add chicken pieces and sear until opaque.
Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 15-20 minutes.
Season with salt, pepper, thyme, oregano, and smoked paprika. Stir in lemon juice and parsley. Add greens near the end and cook until wilted.
Notes
For extra flavor, add a splash of liquid smoke or red pepper flakes for spiciness.
