A hearty and flavorful soup combining tender chicken, fresh vegetables, and Mediterranean herbs for a comforting meal.

Ingredients

Protein

  • 1 lb boneless chicken breasts or thighs, cut into pieces

Vegetables

  • 1 medium onion, chopped
  • 2 carrots carrots, chopped
  • 2 stalks celery stalks, chopped
  • 3 cloves garlic, minced

Canned Goods

  • 1 14 oz diced tomatoes with juices
  • 6 cups chicken broth

Oils & Herbs

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh oregano, chopped (or dried oregano)
  • 1 teaspoon fresh thyme leaves (or dried thyme)
  • 0.5 teaspoon smoked paprika or liquid smoke

Additional

  • 1 cup cooked chickpeas or orzo
  • Pinch red pepper flakes or harissa
  • 1 cup fresh spinach or kale (added near end)

Instructions 

  • Chop onions, carrots, and celery; mince garlic; prepare chicken and herbs.
  • Heat olive oil in a large pot over medium heat. Sauté vegetables until softened, about 5 minutes.
  • Add garlic and cook for 1 minute. Add chicken pieces and sear until opaque.
  • Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 15-20 minutes.
  • Season with salt, pepper, thyme, oregano, and smoked paprika. Stir in lemon juice and parsley. Add greens near the end and cook until wilted.

Notes

For extra flavor, add a splash of liquid smoke or red pepper flakes for spiciness.
