Ingredients

Protein

  • 1 pound Chicken Breast Boneless and skinless
  • 2 tablespoons Moroccan Spice Mix (Adjust to taste)
  • 2 tablespoons Olive Oil

Grains

  • 1 cup Couscous Fine couscous
  • 1.75 cups Chicken Broth

Vegetables

  • 1 cup Cucumber Diced
  • 1 cup Cherry Tomatoes Halved
  • 1 small Red Onion Sliced

Dairy & Sauces

  • 1 cup Greek Yogurt Or tzatziki sauce
  • 1/4 cup Fresh Parsley Chopped

Instructions 

  • Cook the chicken with Moroccan spice mix in olive oil until browned and cooked through.
  • Prepare couscous by boiling chicken broth, then add couscous and let it sit covered for 5 minutes.
  • Fluff couscous with a fork and mix in diced cucumber, cherry tomatoes, red onion, and chopped parsley.
  • Slice cooked chicken and assemble bowls with couscous and a dollop of Greek yogurt or tzatziki.

Notes

For extra flavor, marinate the chicken with spices for 30 minutes before cooking.
