A flavorful, mayo-free chicken salad with coconut and fresh herbs, perfect for a light lunch or snack.

Ingredients

  • 1 1/2 cups chopped cooked chicken
  • 1/2 cup celery, diced
  • 1/4 cup green onion, chopped
  • 1/4 cup dried currants or golden raisins
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh mint, chopped
  • 1 container coconut Greek yogurt (5.3 oz) (Siggi's)
  • 1 tsp curry powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper

Instructions 

  • Combine chicken, celery, green onion, currants, cilantro, and mint in a large bowl.
  • Whisk yogurt with curry powder, garlic powder, salt, and pepper; stir into the chicken mixture.
  • Serve on bread, lettuce cups, or with crackers and veggies.
  • Store leftovers in an airtight container in the fridge for up to 4 days.

Notes

Use fresh herbs for the best flavor.
