Instructions
Season chicken thighs with paprika, Italian seasoning, salt, and pepper. Sear until golden and cooked through.
Cook pasta until al dente. Set aside.
In the same pan, melt butter and sauté shallots, garlic, and onion. Add flour and cook briefly.
Pour in chicken broth and heavy cream, stirring until thickened. Add sun dried tomatoes, spinach, and Parmesan. Return chicken to pan and simmer.
Combine pasta with sauce, garnish with basil, and serve.
Notes
Use fresh basil for the best flavor and adjust seasoning to taste.
