A hearty and flavorful chicken stew infused with sweet maple syrup and savory garlic, perfect for a comforting meal.

Ingredients

Protein

  • 2 pounds boneless, skinless chicken thighs

Vegetables

  • 3 carrots carrots, peeled and sliced
  • 2 stalks celery stalks, chopped
  • 1 piece onion, diced

Aromatics & Liquids

  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 0.25 cup pure maple syrup
  • 2 tablespoons soy sauce (or tamari)
  • 1 teaspoon dried thyme

Seasonings

  • to taste Salt and black pepper

Instructions 

  • Brown chicken thighs in a skillet with olive oil.
  • Chop vegetables and transfer chicken to slow cooker.
  • Mix broth, maple syrup, soy sauce, garlic, and thyme; pour over ingredients.
  • Cook on low for 5 hours until chicken is tender.
  • Adjust seasoning and serve hot.

Notes

For a thicker stew, stir in a cornstarch slurry during the last 15 minutes of cooking.
