A flavorful and hearty dish featuring tender chicken thighs glazed with maple Dijon sauce, paired with roasted butternut squash for a comforting meal.

Ingredients

Chicken

  • 6 pieces chicken thighs
  • 1/2 cup Dijon mustard
  • 1/4 cup maple syrup
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 2 tsp. fresh rosemary (finely chopped)
  • 1/2 small shallot (finely diced)
  • Salt to taste Salt
  • Pepper to taste Pepper

Butternut Squash

  • 1 medium butternut squash (peeled, seeded and cut into 1-inch cubes)
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh rosemary (finely chopped)
  • 1-1/2 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Mix Dijon mustard, maple syrup, olive oil, garlic powder, rosemary, and shallots. Season with salt and pepper.
  • Season chicken with salt and pepper, coat with 3/4 of marinade, and set aside.
  • Toss butternut squash with olive oil, rosemary, garlic powder, paprika, salt, and pepper. Arrange on baking sheet.
  • Place chicken on squash, bake for 40 minutes, basting with remaining marinade.
  • Serve warm, garnished as desired.

Notes

Use fresh herbs for best flavor and ensure chicken reaches 165°F internally.
