Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Mix Dijon mustard, maple syrup, olive oil, garlic powder, rosemary, and shallots. Season with salt and pepper.
Season chicken with salt and pepper, coat with 3/4 of marinade, and set aside.
Toss butternut squash with olive oil, rosemary, garlic powder, paprika, salt, and pepper. Arrange on baking sheet.
Place chicken on squash, bake for 40 minutes, basting with remaining marinade.
Serve warm, garnished as desired.
Notes
Use fresh herbs for best flavor and ensure chicken reaches 165°F internally.
