A flavorful and easy one-pan dish featuring tender chicken, roasted butternut squash, and a sweet-savory maple Dijon glaze.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (sliced into ½-inch thick pieces)

Vegetables

  • 2 cups butternut squash (peeled and cut into 1-inch cubes)

Oils & Condiments

  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon garlic powder

Seasonings

  • to taste Salt and black pepper

Garnish

  • optional Fresh thyme (for garnish)

Instructions 

  • Whisk Dijon mustard, maple syrup, vinegar, garlic powder, salt, and pepper to make the glaze.
  • Heat 1 tablespoon olive oil in a skillet, sear chicken 3-4 minutes per side until cooked, then set aside.
  • Add remaining olive oil, cook squash 10-12 minutes until soft and caramelized.
  • Return chicken to skillet, pour glaze over, and simmer 1-2 minutes to thicken.
  • Garnish with thyme and serve hot.

Notes

Ensure squash is cooked until caramelized for best flavor.
