butternut squash

Instructions
Whisk Dijon mustard, maple syrup, vinegar, garlic powder, salt, and pepper to make the glaze.
Heat 1 tablespoon olive oil in a skillet, sear chicken 3-4 minutes per side until cooked, then set aside.
Add remaining olive oil, cook squash 10-12 minutes until soft and caramelized.
Return chicken to skillet, pour glaze over, and simmer 1-2 minutes to thicken.
Garnish with thyme and serve hot.
