A flavorful chicken dish glazed with maple syrup and bourbon, topped with crunchy pecans for a delightful meal.

Ingredients

Protein

  • 1-1/4 lbs boneless, skinless chicken thighs

Dry Ingredients

  • 1/2 cup gluten free flour

Wet Ingredients

  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons bourbon (Maker's Mark recommended)
  • 1 cup chicken broth
  • 3 Tablespoons pure maple syrup (not pancake syrup)
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons gluten free reduced-sodium Tamari (or soy sauce if not GF)
  • 1/4 teaspoon dried rosemary (crushed between your fingers)

Garnish & Notes

  • 1/4 cup chopped pecans

Instructions 

  • Season chicken with salt and pepper, then dredge in flour and shake off excess.
  • Whisk together broth, maple syrup, pecans, mustard, vinegar, tamari, and rosemary; set aside.
  • Heat oil in skillet, sear chicken until golden, then transfer to plate.
  • Remove skillet from heat, add bourbon carefully, then return to heat and add maple mixture. Simmer until sauce reduces and chicken is cooked through, about 10 minutes.
  • Serve chicken topped with sauce and chopped pecans.

Notes

Ensure to flip the chicken thighs once or twice during simmering for even cooking.
