1-1/4lbsboneless, skinless chicken thighs
Dry Ingredients
1/2cupgluten free flour

Wet Ingredients
2Tablespoonsextra virgin olive oil
2Tablespoonsbourbon (Maker's Mark recommended)
1cupchicken broth
3Tablespoonspure maple syrup (not pancake syrup)
1Tablespoondijon mustard
1Tablespoonapple cider vinegar
2teaspoonsgluten free reduced-sodium Tamari (or soy sauce if not GF)
1/4teaspoondried rosemary (crushed between your fingers)
Garnish & Notes
1/4cupchopped pecans
Instructions
Season chicken with salt and pepper, then dredge in flour and shake off excess.
Whisk together broth, maple syrup, pecans, mustard, vinegar, tamari, and rosemary; set aside.
Heat oil in skillet, sear chicken until golden, then transfer to plate.
Remove skillet from heat, add bourbon carefully, then return to heat and add maple mixture. Simmer until sauce reduces and chicken is cooked through, about 10 minutes.
Serve chicken topped with sauce and chopped pecans.
Notes
Ensure to flip the chicken thighs once or twice during simmering for even cooking.
