A vibrant and refreshing salad combining grilled chicken, sweet mango, and crisp vegetables, perfect for a light meal or side dish.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (grilled and sliced)

Fruits

  • 1 large ripe mango (peeled and diced)

Vegetables

  • 4 cups mixed salad greens (romaine, spinach, or arugula)
  • 0.5 cup cherry tomatoes (halved)
  • 0.25 cup red onion (thinly sliced)
  • 0.25 cup red bell pepper (thinly sliced)
  • 0.25 cup cucumber (sliced)

Nuts & Herbs

  • 0.25 cup toasted almonds or cashews (optional, for crunch)
  • 2 tbsp fresh cilantro or mint (chopped)

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 clove garlic (minced)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp chili flakes (optional, for heat)

Instructions 

  • Season chicken with salt, pepper, and olive oil; grill for 4-5 minutes per side, then rest and slice.
  • Peel and dice mango; prepare vegetables and toast nuts if using.
  • Whisk together dressing ingredients, including chili flakes if desired.
  • In a large bowl, combine greens, chicken, mango, vegetables, and nuts; drizzle with dressing and toss gently.
  • Garnish with chopped herbs and serve with lime wedges.

Notes

For extra crunch, lightly toast nuts before adding.
