A vibrant and flavorful dish combining tender chicken with sweet mango and aromatic spices for a delightful meal.

Ingredients

Protein

  • 2 lbs boneless, skinless chicken thigh meat

Thickening & Cooking

  • 2 tbsp cornstarch
  • 2-3 tbsp canola oil (for cooking)
  • 2 tbsp butter

Fruits & Sweeteners

  • 1 ripe mango ripe mango
  • 1/3 cup honey

Sauces & Liquids

  • 1/4 cup low sodium soy sauce
  • 1/4 cup chicken stock
  • 3 garlic cloves garlic cloves (pressed)
  • 1 lime lime juice (juice only)
  • 1 tsp fresh ginger (grated or shaved)
  • 0.5-1 tsp red pepper flakes (to taste)

Grains & Rice

  • 1 cup jasmine rice

Coconut Milk & Broth

  • 5.46 oz coconut milk
  • 1/2 tsp white granulated sugar
  • salt to taste salt

Instructions 

  • Cut chicken into bite-sized pieces and toss with cornstarch.
  • Heat oil and butter in a pan, cook chicken until browned.
  • Add garlic, ginger, red pepper flakes, and cook for 1 minute.
  • Stir in mango, honey, soy sauce, chicken stock, lime juice, and coconut milk; simmer until sauce thickens.
  • Cook jasmine rice separately, serve chicken over rice with sauce.

Notes

Adjust red pepper flakes to taste for spice level.
