Ingredients

boneless, skinless chicken breasts
(cut into bite-sized pieces)
Vegetables

zucchinis
(sliced into half-moons)

yellow onion
(finely diced)

garlic

dried Italian seasoning

Instructions
Cube the chicken, slice the zucchini, and dice the onion.
Heat olive oil in a large skillet over medium-high heat.
Add chicken, season with salt and pepper, and cook 5-7 minutes until golden.
Add onion and garlic, cook 2 minutes, then add zucchini and Italian seasoning, cook 5 minutes.
Pour in chicken broth, scrape pan, simmer 2-3 minutes, then sprinkle Parmesan and stir until melted.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
