A quick and healthy low-carb dish featuring tender chicken, fresh zucchini, and flavorful seasonings, all cooked in one skillet.

Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)

Vegetables

  • 2 medium zucchinis (sliced into half-moons)
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)

Oils & Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese (optional)

Instructions 

  • Cube the chicken, slice the zucchini, and dice the onion.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken, season with salt and pepper, and cook 5-7 minutes until golden.
  • Add onion and garlic, cook 2 minutes, then add zucchini and Italian seasoning, cook 5 minutes.
  • Pour in chicken broth, scrape pan, simmer 2-3 minutes, then sprinkle Parmesan and stir until melted.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
