Ingredients

Protein

  • 2 cups cooked chicken breast (shredded, or use rotisserie chicken)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped)
  • to taste Salt and pepper
  • 1 handful baby spinach (optional)

Instructions 

  • Warm tortillas in microwave for 10-15 seconds and heat a skillet with olive oil over medium.
  • Mix chicken, cheeses, cream cheese, garlic, parsley, salt, pepper, and spinach (if using) until combined.
  • Divide mixture among tortillas, roll tightly, and place seam-side down in skillet.
  • Cook 2-3 minutes per side until golden and cheese melts.
  • Slice in half diagonally and serve hot, garnished with parsley if desired.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
