A healthy and flavorful low carb meal featuring grilled chicken, fresh veggies, and barbecue sauce, perfect for a quick lunch or dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup low carb barbecue sauce

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, sliced
  • 1 ripe avocado, diced
  • 4 cups mixed greens (spinach or arugula)
  • 1 small red onion, thinly sliced
  • 2 tbsp olive oil

Instructions 

  • Preheat grill or oven to medium-high heat.
  • Season chicken with salt and pepper, then grill 6-8 minutes per side or bake at 375°F for 25-30 minutes. Brush with barbecue sauce and let rest.
  • Chop cherry tomatoes, cucumber, red onion, and avocado into bite-sized pieces.
  • Slice rested chicken and layer greens in bowls, top with chicken and chopped veggies. Drizzle with extra barbecue sauce if desired.
  • Serve immediately.
