A flavorful chicken dish featuring a creamy lemon sauce, fresh spinach, and Parmesan cheese, perfect for a quick and elegant meal.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 piece lemon (juice and zest) (Juice of 1 lemon and zest of 1 lemon (~1 tsp))
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Garnish

  • optional extra Parmesan and lemon slices (for garnish)

Instructions 

  • Pound chicken to even thickness, season with salt and pepper.
  • Heat olive oil in skillet, sear chicken 3-4 minutes per side until golden, then set aside.
  • Cook garlic in same pan 1 minute, add chicken broth, lemon juice, and zest; simmer 2 minutes.
  • Reduce heat, stir in heavy cream and Parmesan, cook 3-4 minutes until thickened.
  • Add spinach, cook until wilted, then return chicken to pan, spoon sauce over, and heat through 2-3 minutes. Garnish with lemon slices and extra Parmesan if desired.

Notes

Ensure not to overcook the chicken for best tenderness.
