Lemon Herb Grilled Chicken with Couscous

A flavorful and healthy dish featuring marinated grilled chicken served over fluffy couscous with fresh herbs and vegetables.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 large lemon (juice and zest)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 1 cup couscous
  • 1 cup low-sodium chicken broth or water
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 small cucumber, diced
  • 1 small tomato, diced (optional)

Instructions 

  • Whisk olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Marinate chicken for 30 minutes to 2 hours.
  • Bring chicken broth to a boil, add salt and olive oil, stir in couscous, cover, and let sit for 5 minutes. Fluff with a fork and mix in parsley, lemon juice, cucumber, and tomato.
  • Grill chicken over medium-high heat for 5-6 minutes per side until cooked through. Rest before slicing.
  • Serve couscous topped with sliced grilled chicken and garnish with herbs or lemon wedge.

Notes

Marinate the chicken longer for more flavor. Adjust salt to taste.
