Ingredients

  • 4 pieces bone-in chicken thighs (trimmed)
  • 0.5 cup mayonnaise
  • 0.5 cup shredded parmesan cheese
  • 1 tsp garlic paste
  • 1 tsp kosher salt
  • 1 tsp blackening seasoning
  • 1 tsp smoked paprika
  • 0.5 lb baby Dutch potatoes (halved)
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley (chopped, to taste)

Instructions 

  • Preheat oven to 350°F (175°C). Arrange potatoes in a baking dish.
  • Place chicken thighs on top of potatoes and season generously with seasoning blend.
  • Spread mayo, garlic paste, and parmesan cheese over chicken and potatoes; mix to combine.
  • Bake for 1 hour 15 minutes until chicken skin is crisp and juices run clear.
  • Garnish with lemon zest and chopped parsley before serving.
