Instructions
Zest and juice one lemon into a bowl. Add olive oil, garlic, Italian seasoning, red pepper flakes, and parsley. Whisk to combine.
Slice chicken breasts horizontally into thin cutlets. Pat dry and season with salt and pepper.
Marinate chicken in the mixture for 30 minutes to 2 hours in the refrigerator.
Heat olive oil in a skillet over medium heat. Sear chicken in batches for about 4 minutes per side until golden and cooked through. Remove when internal temperature reaches 160°F, then rest for 5 minutes.
Slice the remaining lemon. Garnish chicken with chopped parsley and lemon slices before serving.
