Ingredients

  • 2 pieces lemons (zest and juice one, slice the other for serving)
  • 0.25 cup extra virgin olive oil
  • 5 cloves garlic (crushed or minced)
  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon red pepper flakes (optional)
  • 0.25 cup Italian parsley (chopped, plus more for garnish)
  • 2 pounds boneless skinless chicken breasts (about 4 large chicken breasts)
  • 2 tablespoons extra virgin olive oil (for cooking)

Instructions 

  • Zest and juice one lemon into a bowl. Add olive oil, garlic, Italian seasoning, red pepper flakes, and parsley. Whisk to combine.
  • Slice chicken breasts horizontally into thin cutlets. Pat dry, season with salt and pepper.
  • Marinate chicken in the mixture, cover, and refrigerate for 30 minutes to 2 hours.
  • Heat 2 tablespoons olive oil in a skillet over medium heat. Sear chicken in batches for about 4 minutes per side until golden and cooked through.
  • Remove chicken, tent with foil, and let rest for 5 minutes. Slice the remaining lemon.
  • Garnish chicken with chopped parsley and lemon slices. Serve.

Notes

For extra flavor, marinate the chicken longer or add a splash of white wine during cooking.
