Instructions
Zest and juice one lemon into a bowl. Add olive oil, garlic, Italian seasoning, red pepper flakes, and parsley. Whisk to combine.
Slice chicken breasts horizontally into thin cutlets. Pat dry, season with salt and pepper.
Marinate chicken in the mixture, cover, and refrigerate for 30 minutes to 2 hours.
Heat 2 tablespoons olive oil in a skillet over medium heat. Sear chicken in batches for about 4 minutes per side until golden and cooked through.
Remove chicken, tent with foil, and let rest for 5 minutes. Slice the remaining lemon.
Garnish chicken with chopped parsley and lemon slices. Serve.
Notes
For extra flavor, marinate the chicken longer or add a splash of white wine during cooking.
