Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 large lemon (juice of 1 large lemon and zest)
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking dish with parchment or lightly grease.
  • Mix olive oil, minced garlic, lemon juice, lemon zest, thyme, rosemary, salt, and pepper to make the marinade.
  • Place chicken breasts in the dish and coat with marinade. Marinate for 10-15 minutes if possible.
  • Bake uncovered for 20-25 minutes, basting halfway through. Ensure internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes, then slice and serve with your favorite sides.

Notes

For extra flavor, add fresh herbs or lemon slices as garnish.
