Ingredients

Meat

  • 4 pieces bone-in, skin-on chicken thighs
  • 0.25 cup freshly squeezed lemon juice
  • 2 tablespoons fresh dill, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon zest (optional) (optional)

Instructions 

  • Whisk together lemon juice, garlic, dill, olive oil, salt, pepper, and lemon zest to make the marinade.
  • Place chicken thighs in a resealable bag or dish, pour marinade over, and refrigerate for at least 30 minutes.
  • Preheat skillet over medium-high heat. Cook chicken skin-side down for 5-7 minutes until crispy.
  • Flip and cook another 5-7 minutes until internal temperature reaches 165°F (74°C).
  • Remove from heat and let rest a few minutes before serving.
