Ingredients

For the Chicken

  • 2 pieces chicken breasts (diced or whole for grilling)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 1 tablespoon honey
  • 1 teaspoon chili flakes
  • 1 tablespoon lemon juice

Salt and black pepper

For the Cucumber Salad

  • 1 cup diced cucumber
  • ½ cup chopped cherry tomatoes or red bell pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil

For the Bowl Base

  • ½ cup hummus (homemade or store-bought)
  • 1 teaspoon olive oil
  • ¼ teaspoon smoked paprika or chili powder

Instructions 

  • Marinate the chicken by combining olive oil, garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Coat the chicken and refrigerate for 20-30 minutes.
  • Grill the chicken until cooked through (5-7 minutes per side if whole, 10-12 minutes if diced), then rest and dice into bite-sized pieces.
  • Prepare the cucumber salad by mixing cucumber, tomatoes or bell pepper, lemon juice, olive oil, and salt. Toss and set aside.
  • Spread hummus in the bowl, drizzle with olive oil, and sprinkle paprika or chili powder on top.
  • Assemble the bowl by adding grilled chicken over hummus, topping with cucumber salad, and garnishing with chopped parsley.

Notes

For extra flavor, serve with warm pita or your favorite side.
