A flavorful and quick lemon chicken pasta perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 3 pieces boneless chicken breasts
  • 1.5 tsp lemon zest
  • 3/4 tsp garlic powder
  • 1/2 tsp italian seasoning
  • 1/2 tsp onion powder
  • 2.5 tbsp olive oil

  • 16 oz farfalle
  • 1 piece zucchini
  • 1 yellow squash yellow squash
  • 1 tbsp olive oil
  • 3 garlic cloves garlic (minced)
  • 1/2 tsp garlic powder
  • 1/2 tsp italian seasoning
  • 1/4 tsp red pepper flakes
  • 4 tbsp butter
  • 1/3 cup lemon juice
  • 1 cup parmesan cheese
  • 1/4 cup parsley

Instructions 

  • Season chicken with salt, pepper, lemon zest, garlic powder, onion powder, and Italian seasoning. Cook chicken in olive oil until golden, then set aside.
  • Cook pasta until al dente, then drain.
  • Sauté zucchini and yellow squash in olive oil, add garlic, Italian seasoning, and red pepper flakes; cook briefly.
  • Add butter and lemon juice to the vegetables, then combine with cooked pasta. Stir in Parmesan cheese and season to taste.
  • Serve the pasta topped with cooked chicken and garnished with parsley and extra Parmesan.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
