A creamy and zesty baked pasta dish featuring tender chicken and fresh lemon, perfect for a comforting yet bright meal.

Ingredients

Pasta

  • 1 pound dry small pasta

Chicken

  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)

Vegetables

  • 1 medium yellow onion (diced small)
  • 3 cloves garlic (finely minced)

Seasonings

  • to taste salt and black pepper

Canned Goods

  • 2 14.5 oz cans cream of chicken soup

Dairy

  • 3/4 cup milk
  • 1 tablespoon lemon juice

Cheese

  • 2 tablespoons parmesan cheese (finely grated)

Garnish

  • as needed fresh parsley, chopped (for garnish)
  • 1/2 small lemon sliced lemon (for garnish)

Instructions 

  • Cook pasta according to package instructions; drain and set aside.
  • In a skillet, cook chicken until browned; add diced onion and minced garlic, cook until softened.
  • Mix cooked chicken and vegetables with cream of chicken soup, milk, lemon juice, and Parmesan cheese.
  • Combine with cooked pasta, transfer to a baking dish, and bake at 375°F (190°C) for 20-25 minutes.
  • Garnish with chopped parsley and lemon slices before serving.

Notes

For a creamier texture, add a splash of extra milk or cheese.
