A bright and flavorful dish combining tender chicken, zesty lemon, and pasta for a quick and satisfying meal.

Ingredients

Protein

  • 1 lb Chicken Breasts boneless and skinless
  • 8 oz Pasta (any shape you prefer, such as penne, spaghetti, or fettuccine)
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 1 lemon Lemon zested and juiced (about 1 lemon)
  • 1/2 cup Chicken Broth (1/2 cup)
  • 1/4 cup Parmesan Cheese (freshly grated)
  • to taste Salt and Pepper
  • optional Fresh Parsley (for garnish)

Instructions 

  • Cook pasta according to package instructions, undercooking slightly. Reserve 1/2 cup of pasta water, then drain.
  • Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook 6-7 minutes per side until cooked through. Rest and slice.
  • In the same skillet, sauté garlic for 30 seconds. Add chicken broth, lemon juice, and zest; stir to combine.
  • Return sliced chicken and cooked pasta to the skillet. Toss with sauce, adding reserved pasta water as needed.
  • Stir in Parmesan cheese until melted. Adjust seasoning with salt, pepper, or lemon juice. Garnish with parsley if desired. Serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes or a squeeze of additional lemon juice.
