Ingredients

Meat

  • 4 slices bacon (diced)
  • 1 tablespoon butter

Vegetables

  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)

Broth

  • 4 to 6 cups low sodium chicken broth

Spices

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill weed
  • ½ teaspoon dried chives
  • salt and fresh ground pepper (to taste)

Chicken

  • 4 cups cooked shredded chicken

Dairy

  • 8 ounces cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 3 to 4 cups baby spinach
  • ¼ cup heavy cream
  • sliced green scallions (for garnish)

Instructions 

  • Cook bacon until crispy, then remove, leaving grease.
  • Melt butter, add onions, cook for 3 minutes, then add garlic and cook for 20 seconds.
  • Add chicken broth, seasonings, and bay leaf; bring to a boil, then simmer for 5 minutes.
  • Stir in chicken, cook for 5 minutes, then add cream cheese and whisk until melted.
  • Add spinach, cook for 2 minutes, then stir in heavy cream and cook for 1 minute.
  • Adjust seasonings, remove bay leaf, and top with bacon and scallions before serving.

Notes

For extra flavor, consider adding a splash of hot sauce or your favorite herbs.
