Instructions
Set the Instant Pot to sauté, add butter and chicken, and cook for 4 minutes per side if raw, or warm if leftover.
Turn off the Instant Pot, add maple syrup, onion, soy sauce, garlic, sesame oil, ketchup, salt, and pepper, then stir.
Pour chicken broth over the mixture, seal the lid, and set to manual for 10 minutes if using leftover chicken or 15 minutes if raw.
Allow natural release, then shred the chicken with a fork.
Notes
For extra flavor, toast the buns before serving.
