A quick and delicious chicken bowl packed with protein, ready in just 25 minutes with minimal ingredients.
Ingredients

boneless, skinless chicken breasts
(cut into 1-inch cubes)
Vegetables

broccoli florets

cooked brown rice
(prepared according to package directions)

Instructions
Preheat oven to 425°F (220°C).
Cut chicken into 1-inch cubes and toss with broccoli, 2 tbsp olive oil, garlic powder, paprika, salt, and pepper.
Spread mixture on parchment-lined baking sheet and bake for 18-20 minutes.
While roasting, prepare brown rice according to package, adding remaining olive oil.
Let chicken rest for 2-3 minutes, then serve over rice in bowls, topped with roasted chicken and broccoli.
Notes
