A quick and delicious chicken bowl packed with protein, ready in just 25 minutes with minimal ingredients.

Ingredients

Protein

  • 1.5 lb boneless, skinless chicken breasts (cut into 1-inch cubes)

Vegetables

  • 3 cups broccoli florets (fresh)

Carbohydrate

  • 2 cups cooked brown rice (prepared according to package directions)

Fats & Oils

  • 3 tbsp olive oil (divided)

Spices & Seasonings

  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions 

  • Preheat oven to 425°F (220°C).
  • Cut chicken into 1-inch cubes and toss with broccoli, 2 tbsp olive oil, garlic powder, paprika, salt, and pepper.
  • Spread mixture on parchment-lined baking sheet and bake for 18-20 minutes.
  • While roasting, prepare brown rice according to package, adding remaining olive oil.
  • Let chicken rest for 2-3 minutes, then serve over rice in bowls, topped with roasted chicken and broccoli.

Notes

For extra flavor, add a squeeze of lemon or your favorite hot sauce.
