Instructions
Preheat your oven to 375°F (190°C) and mix baguette pieces with olive oil, salt, pepper, and thyme or rosemary.
Bake the coated bread for 15-20 minutes until golden brown, tossing halfway through.
Whisk together lemon juice, egg yolk, vinegar, mustard, garlic, and anchovies, then slowly drizzle in olive oil to emulsify.
Wash and dry the romaine lettuce, then chop or tear into bite-sized pieces.
Toss the lettuce with the dressing, add croutons, and finish with grated Parmigiano Reggiano on top.
Notes
For extra flavor, consider adding more anchovies or using a flavored olive oil.
