This Caesar salad is a delightful blend of crispy romaine, homemade croutons, and a creamy dressing that elevates the classic dish.

Ingredients

Croutons

  • 1 baguette sliced into bite-sized pieces
  • 60 ml good-quality olive oil (plain or with basil/garlic infusion)
  • 1/4 cup freshly shredded parmesan cheese

Dressing

  • 120 ml freshly squeezed lemon juice
  • 1 extra-large egg yolk (at room temperature)
  • 15 ml white wine vinegar
  • 2 teaspoons dijon mustard
  • 2 large garlic cloves (roughly minced)
  • 8-10 fillets anchovy (optional but recommended)
  • 360 ml high-quality mild olive oil
  • 2 heads crisp romaine lettuce
  • 120 ml freshly grated italian parmigiano reggiano

Instructions 

  • Preheat your oven to 375°F (190°C) and mix baguette pieces with olive oil, salt, pepper, and thyme or rosemary.
  • Bake the coated bread for 15-20 minutes until golden brown, tossing halfway through.
  • Whisk together lemon juice, egg yolk, vinegar, mustard, garlic, and anchovies, then slowly drizzle in olive oil to emulsify.
  • Wash and dry the romaine lettuce, then chop or tear into bite-sized pieces.
  • Toss the lettuce with the dressing, add croutons, and finish with grated Parmigiano Reggiano on top.

Notes

For extra flavor, consider adding more anchovies or using a flavored olive oil.
