A quick and flavorful stir fry combining tender chicken, colorful peppers, and a sweet-spicy sauce for a satisfying meal.
Ingredients

boneless skinless chicken thighs
(about 6 medium thighs, cut into 1" pieces)

cornstarch

light flavored olive oil
Vegetables

bell peppers
assorted bell peppers
(sliced into thin ¼" strips)

green onions
(sliced thin, for topping)

honey

light brown sugar

low-sodium soy sauce

Sriracha hot sauce

Instructions
Toss chicken with cornstarch; set aside. Mix honey, brown sugar, soy sauce, Sriracha, and garlic to make sauce.
Heat oil in a skillet over medium-high heat. Cook chicken for 1 minute, then stir and cook 2 more minutes.
Add peppers; stir and cook until crisp-tender, about 2 minutes.
Pour in sauce; cook on high, stirring until thickened and chicken is coated, about 2-3 minutes.
Sprinkle with green onions and serve immediately.
Notes
Serve with rice or noodles for a complete meal.
