Instructions
Combine all marinade ingredients in a blender or bowl, whisk until smooth.
Marinate chicken in half of the mixture for 30 minutes at room temperature or 6-12 hours refrigerated.
Stir cornstarch into remaining marinade to make glaze; heat until slightly thickened.
Preheat grill to medium-high; soak wooden skewers in water if using.
Thread chicken onto skewers, grill 9-12 minutes, turning occasionally, until cooked through.
Rest skewers 4-5 minutes, then serve drizzled with glaze and garnished with cilantro and lime wedges.
Notes
Omitting lime juice during marination prevents the acid from breaking down the chicken fibers.
